  • 1 1/2 Tbsp Wegmans Basting Oil

  • 1/2 Tbsp Italian Classics 5-Leaf Balsamic Vinegar of Modena

  • 1 (about 3/4 lb) sweet onion, peeled, cut into 1/2-inch slices

  • 2 (about 3/4 lb) organic bell peppers, any color, halved lengthwise

  • 1 (about 1/2 lb) organic zucchini or yellow squash, halved lengthwise

  • 1 (about 1/2 lb) eggplant, sliced in 1/2-inch discs

  • Salt and pepper to taste

  • Step 1

    Preheat grill on MED. Mix basting oil and balsamic vinegar in small dish; set aside.
  • Step 2

    Run two parallel skewers, approx 1-inch apart, through each slice of onion. Brush onions, peppers, squash, and eggplant with 1 Tbsp oil and vinegar mixture; season with salt and pepper.
  • Step 3

    Grill about 10 min, turning every 3 min, until grill marks appear on all sides and vegetables are tender.
  • Step 4

    Slide onions off skewers. Cut all veggies in approx 1-inch pieces. Transfer to serving bowl; drizzle with remaining oil and vinegar mixture. Season with salt and pepper; toss gently.
