  • 1/4 cup Wegmans Organic Extra Virgin Olive Oil

  • 1 container (7 oz) Wegmans Diced Mirepoix (Produce Dept)

  • 1 Wegmans Organic Bay Leaf

  • 1/2 tsp Wegmans Organic Thyme Leaves

  • 1/2 cup Wegmans Organic All Purpose Flour

  • 1 container (32 oz) Wegmans Organic Turkey Broth

  • 2 Tbsp Wegmans Organic Unsalted Butter

  • Salt and pepper to taste

Directions

  • Step 1

    Heat oil in pan on LOW. Add mirepoix, bay leaf, and thyme; cook, stirring occasionally, about 10 min, until soft but not browned. Add flour; cook, stirring, about 7 min, until lightly browned. Do not over-brown.
  • Step 2

    Add half the broth to pan; whisk to combine. Add remaining broth; whisk to combine. Increase heat to MED-HIGH; bring to a boil. Cook, stirring, 1-2 min. Reduce heat to LOW; cook, simmering, 30 min. Remove from heat.
  • Step 3

    Remove and discard mirepoix and bay leaf. Add butter; stir until melted. Season with salt and pepper. Serve immediately or chill until using.

Chef Tip

• This can be made a day ahead and stored in the refrigerator. • Turkey broth can be replaced with chicken broth.
