  • 3 Tbsp Wegmans Basting Oil

  • 1 pkg (20 oz) Wegmans Cleaned & Cut Butternut Squash, 1/2-inch dice

  • 1/2 red onion, peeled, 1/2-inch dice

  • 1/2 of a 16 oz pkg Wegmans Cleaned & Cut Kale Greens

  • 3/4 cup Wegmans Organic Amore Lemon Dressing

  • 1 1/2 cups Wegmans Walnuts Halves & Pieces, toasted, divided

  • 3/4 cup Italian Classics Shredded Italian Blend (Cheese Shop)

  • 1/2 cup golden raisins

  • Salt and pepper to taste

Directions

  • Step 1

    Preheat oven to 450 degrees. Add Tuscan seasoning and basting oil to large bowl; stir to combine. Add squash and onions; toss to coat. Arrange in single layer on baking sheet.
  • Step 2

    Roast, 20 min, until tender. Remove from oven; let cool.
  • Step 3

    Toss squash-onion mixture, kale, dressing, 1 1/4 cups walnuts, cheese, and raisins in large bowl; season with salt and pepper. Garnish with remaining walnuts.

Chef Tip

• Squash can be roasted the day before making the salad. • Toast nuts in skillet on MED-HIGH 1-2 min until lightly browned.
