  • 1 pkg (6.3 oz) Wegmans Organic White Rice Vermicelli Noodles

  • 1 Wegmans Organic Lemon Garlic Marinated Chicken Breast Cutlet

  • 3/4 cup snow peas, trimmed, sliced in thin strips

  • 10 Wegmans Organic Shiitake Mushrooms, washed, stems removed & discarded, sliced in thin strips

  • 1/2 Wegmans Organic Red Bell Pepper, cored, sliced in thin strips

  • 1 Serrano pepper, stemmed, seeded, sliced in thin strips

  • 1/3 organic seedless cucumber, sliced

  • 1/4 cup chopped Wegmans Organic Cilantro

  • 2 shallots, peeled, cut in thin match-like sticks

  • 3/4 of a 16 oz pkg Wegmans Organic Raw Peeled & Deveined Shrimp, thawed, halved lengthwise

  • 2 Tbsp Wegmans Extra Virgin Avocado Oil

  • 3/4 cup Wegmans Organic Sweet Chili Sauce

  • Juice of 2 limes (about 1/4 cup)

  • Salt and pepper to taste

Directions

  • Step 1

    Soak vermicelli in enough water to cover, 15 min. Snip into 4-5-inch lengths with scissors; return to water. Set aside.
  • Step 2

    Grill chicken per package directions. Transfer chicken to clean cutting surface; cut into slivers. Set aside.
  • Step 3

    Blanch peas and mushrooms in a large pot of boiling, salted water 20 sec. Transfer to bowl of ice water (keep water boiling); drain. Place on clean paper towel. Add to large bowl, along with peppers, cucumber, cilantro, and shallots.
  • Step 4

    Add shrimp to boiling water. Cook, stirring, 1-2 min. Add vermicelli; cook about 2 min until tender. Transfer to bowl of ice water; drain. Add shrimp, chicken, and vermicelli to bowl with vegetables. Add oil; toss to loosen. Add sweet chili sauce; toss. Drizzle with lime juice; toss to combine. Season with salt and pepper.

Chef Tip

For more intense flavor, add 2 Tbsp fish sauce.
