Basic Garbanzo Beans

  • 1 pkg (1 lb) Wegmans Organic Dried Great Northern Beans, Black Beans, or Kidney Beans

  • 7 quarts water, divided

  • 1 Tbsp salt

  • 1/2 red onion, peeled, chopped

  • 1 Wegmans Organic Carrot, peeled, chopped

  • 1 stalk celery, chopped

  • 1 Wegmans Organic Bay Leaf

  • 1 sprig Wegmans Organic Rosemary

  • 1 sprig Wegmans Organic Sage

  • 3-5 cloves Wegmans Peeled Garlic, crushed

Salad

  • 1 pkg (16 oz) Wegmans Calamari Rings & Tentacles, thawed per pkg directions

  • 1 pkg (16 oz) Wegmans Organic Raw Peeled & Deveined Shrimp, thawed and patted dry, cut in thirds

  • 1 pint Wegmans Red Sweeties Cherry Tomatoes, halved

  • 1/2 red onion, peeled, finely diced (about 1 cup)

  • 1 fennel bulb, peeled, cleaned, tops trimmed, cored, 1/2-inch diced

  • 2 Tbsp Italian Classics Hot Pepper Spread

  • 4 Tbsp chopped fresh Italian parsley

  • Juice and zest of 1 lemon (2-3 Tbsp juice)

  • 2 Tbsp Italian Classics Organic Red Wine Vinegar

  • 1/2 cup Wegmans Organic Extra Virgin Olive Oil

  • Salt and freshly ground pepper to taste

Directions

  • Step 1

    Make basic garbanzo beans:
  • Step 2

    Sort and rinse beans. Place beans in large bowl. Bring 2 quarts of water to a boil; carefully pour boiling water over beans in bowl. Soak beans 10 min; strain. Rinse under cold water.
  • Step 3

    Add 5 quarts cold water, 1 Tbsp salt, and beans to stockpot; bring to a simmer.
  • Step 4

    Place onion, carrot, celery, bay leaf, rosemary, sage and garlic in center of cheesecloth square; close sachet and tie. Add sachet to stockpot; return to simmer.
  • Step 5

    Cook about 2 hours or until beans are tender. Remove and discard sachet. Strain beans from liquid.
  • Step 6

    Make salad:

    Chill cooked beans in large mixing bowl.
  • Step 8

    Add enough salted water to fill stockpot; bring to a boil on HIGH.
  • Step 9

    Drop calamari rings into water; cook 30 seconds until translucent. Transfer to bowl with chilled beans.
  • Step 10

    Return water to a boil. Add shrimp; cook 2 min, or until internal temp reaches 130 degrees (check by inserting thermometer halfway into thickest part of shrimp).
  • Step 11

    Transfer shrimp to clean bowl; let rest at least 2 min. Add shrimp to bowl with beans and calamari.
  • Step 12

    Add tomatoes, onion, fennel, hot pepper spread, parsley, lemon zest and juice, red wine vinegar and olive oil to bean-seafood mixture. Stir to mix thoroughly. Season with salt and pepper. Refrigerate until serving.

Chef Tip

Substitute Basic Dried Bean recipe with 4 cans (15 oz each) Wegmans Organic Garbanzo Beans, drained.
