  • 1 lemon, zested then sliced, divided

  • 2 1/4 tsp Wegmans Garlic Herb Seasoning Shak'r, divided

  • 1 container (5.3 oz) Wegmans Plain Greek Yogurt

  • 1 1/2 lbs Wegmans White Potatoes, cut into 1-inch wedges

  • 1 (about 3/4 lb) red onion, peeled, cut into wedges with root trimmed but intact

  • 2 Tbsp Wegmans Pure Olive Oil, divided

  • 2 (about 24 oz total) Wegmans Boneless Skinless Chicken Breasts, each cut into 8 equal pieces

Directions

  • Step 1

    Preheat oven to 450 degrees with rack center. Make yogurt sauce: Combine lemon zest, 1/4 tsp garlic herb seasoning, and yogurt in bowl. Set aside.
  • Step 2

    Toss potatoes, onion, 1 Tbsp oil, and 1/4 tsp garlic herb seasoning in large bowl. Arrange in single layer on large nonstick foil-lined rimmed baking sheet. Roast 25 min, turning once halfway through.
  • Step 3

    Place chicken between triple thicknesses of plastic wrap; flatten with meat mallet to a uniform 1/2 inch. Remove chicken from plastic wrap. Toss chicken with remaining oil; set aside.
  • Step 4

    Arrange chicken in single layer on baking sheet with vegetables. Tuck lemon slices into mixture. Sprinkle chicken with remaining garlic herb seasoning.
  • Step 5

    Return baking sheet to oven; roast 10-12 min until internal temp of chicken reaches 165 degrees (check by inserting thermometer halfway into thickest part of chicken). Remove from oven. Optional: Garnish with parsley. Serve with yogurt sauce.

To make recipe using chicken thighs, replace 2 chicken breasts with 7 (about 5 oz each) boneless skinless chicken thighs, and follow directions below: 1. Preheat oven to 450 degrees with rack in upper third of oven. Make yogurt sauce: Combine lemon zest, 1/4 tsp garlic herb seasoning, and yogurt in bowl. Set aside. 2. Toss potatoes, onion, 1 Tbsp oil, and 1/4 tsp garlic herb seasoning in large bowl. Arrange in single layer on large nonstick foil-lined rimmed baking sheet. Roast 20 min. 3. Toss chicken thighs with remaining oil; set aside. Remove baking sheet from oven; turn over vegetables. Change heat setting to BROIL on HIGH. 4. Arrange chicken in single layer on baking sheet with vegetables. Tuck lemon slices into mixture. Sprinkle chicken with remaining garlic herb seasoning. 5. Return baking sheet to oven; broil 15 min, turning once halfway through, until internal temp of chicken reaches 165 degrees (check by inserting thermometer halfway into thickest part of chicken). Remove from oven. Garnish with parsley. Serve with yogurt sauce.
