  • 1/4 cup Gefen Honey

  • 2 Tbsp Bartenura Balsamic Vinegar

  • 5 Tbsp Manischewitz Sweetened Potato Pancake Mix

  • 4 (6 oz each) Wegmans Fresh Skinless Atlantic Salmon Portions

  • 4 Tbsp extra virgin olive oil

  • 1/4 bunch fresh chives, minced

  • Kosher salt and pepper to taste

Directions

  • Step 1

    Whisk honey and vinegar together in small bowl; set aside.
  • Step 2

    Add sweet potato flakes to shallow bowl. Place fillets (one at a time) in mixture. Coat well by pressing potato flakes onto fillets.
  • Step 3

    Heat oil in pan on MED-HIGH until oil faintly smokes; add fillets. Cook 5 min. Turn over.
  • Step 4

    Reduce heat to MED; cook, 3-4 min, until internal temp of fillets reaches 130 degrees (check by inserting thermometer halfway into thickest part of fillet). Transfer to serving platter; let rest 2 min.
  • Step 5

    Top each fillet with about 1 1/2 Tbsp honey-vinegar mixture and chives. Season with salt and pepper.
