  • 1/4 cup Wegmans 100% Pure Honey

  • 2 Tbsp Italian Classics Two Leaf Balsamic Vinegar of Modena

  • 4 (about 6 oz each) Wegmans Boneless Skinless Chicken Breasts

  • Kosher salt and pepper to taste

  • 1/2 cup Manischewitz Homestyle Potato Latke Mix

  • 4 Tbsp Wegmans Organic Extra Virgin Olive Oil, divided

  • 1/4 bunch chives, minced

Directions

  • Step 1

    Whisk honey and vinegar together in small bowl; set aside.
  • Step 2

    Season chicken with salt and pepper. Put potato flakes in shallow bowl. Place one chicken breast at a time in bowl, coating well by pressing potato flakes onto both sides.
  • Step 3

    Heat 2 Tbsp olive oil in large nonstick skillet on MED. Place 2 chicken breasts in pan; cook 4-5 min, until color changes 3/4 of way up. Turn over; cook 8-10 min until internal temp reaches 165 degrees (check by inserting thermometer halfway into thickest part of meat).
  • Step 4

    Transfer to clean serving platter; keep warm. Repeat with remaining chicken.
  • Step 5

    Top each piece chicken with about 1 1/2 Tbsp honey-vinegar mixture and chives.
