  • 2 1/4 cups Wegmans Whole Milk

  • 1 Tbsp Wegmans Organic Unsalted Butter

  • 2 Tbsp gluten-free baking flour

  • 1/2 lb Wegmans Medium Buttery Brie (Cheese Shop), rind removed, cubed (no rind)

  • 1/2 lb Wegmans Medium Cheddar (Cheese Shop), shredded

  • 1 roasted hot Hatch chile, peeled, seeded, minced (wear gloves)

  • 3 roasted mild Hatch chiles, peeled, seeded, minced (wear gloves)

  • 1 pkg (16 oz) Italian Classics Organic Cavatappi Pasta, cooked per pkg directions

  • 3 Wegmans Organic Large Brown Eggs, beaten

  • 1/2 of a 10 oz pkg Wegmans Organic Get Dippin' Blue Corn Tortilla Chips, crushed

Directions

  • Step 1

    Preheat oven to 350 degrees. Heat milk, butter, and flour in sauce pan on HIGH; bring to boil, stirring continuously.
  • Step 2

    Reduce heat to MED. Add Brie, stirring continuously, until creamy. Add Cheddar, stirring continuously, until creamy. Add Hatch chiles; stir.
  • Step 3

    Add cooked pasta to cheese sauce; stir to coat. Spread evenly in 13x9-inch baking dish. Pour eggs evenly over pasta. Sprinkle top of pasta with crushed chips.
  • Step 4

    Bake 25-30 min, until egg is set.

Chef Tip

You can substitute your favorite roasted pepper for the Hatch chiles.
