  • 1 Tbsp Wegmans Basting Oil

  • Salt and pepper to taste

  • 1/2 of a 5 oz pkg Wegmans Organic Baby Spinach

  • 1 pkg (9 oz) Wegmans Amore Cheese Tortellini (Dairy Dept)

  • 1 container (16 oz) Wegmans Amore Vodka Blush Sauce, warmed

  • Italian Classics Grated Pecorino Romano (Cheese Shop), for garnish

Directions

  • Step 1

    Preheat oven to 400 degrees. Toss cauliflower and basting oil in large bowl; season with salt and pepper. Arrange in single layer on parchment paper-lined baking sheet.
  • Step 2

    Roast about 20 min, turning once halfway through, until lightly browned and tender. Transfer to large bowl; set aside.
  • Step 3

    Toss baby spinach with cauliflower until wilted; season to taste with salt and pepper.
  • Step 4

    Cook pasta per package directions. Set aside.
  • Step 5

    Toss veggie mixture with warmed sauce and cooked pasta; sprinkle with cheese.
