  • 1 sweet onion, peeled, sliced into 6 rings

  • 3 Tbsp Wegmans Basting Oil, divided

  • 2 tsp Wegmans Sweet & Smoky Flavored BBQ Seasoning Shak'r, divided

  • 3 pkgs (1 lb each) Wegmans Organic 85/15 Ground Beef

  • 1 cup "Roasted Tomato Aioli" (search related recipe)

  • 6 Wegmans Brioche Rolls, sliced, toasted

  • 6 slices extra sharp Cheddar cheese

  • 5 roasted hot Hatch chiles, peeled, seeded, cut into rings (wear gloves)

Directions

  • Step 1

    Preheat grill to MED. Drizzle onions with 1 Tbsp basting oil; sprinkle with 1 tsp of BBQ seasoning. Place on grill; cook until soft, set aside.
  • Step 2

    Form beef into 6 patties. Sprinkle patties with remaining seasoning and drizzle with remaining oil. Place on grill; cook until desired doneness*.
  • Step 3

    Spread toasted rolls with aioli. Top with cooked patties, cheese, grilled onion rings, and chile slices.
  • Step 4

    * If using non-irradiated ground beef, or if adding raw ingredients (not ready to eat) like raw eggs or raw produce, cook to 160 degrees.

Chef Tip

• While grilling onions and they begin to soften and char, remove the outer rings to allow for the inner rings to cook properly. • You can substitute your favorite roasted pepper for the Hatch chiles.
