  • 1-1/2 Tbsp Wegmans Organic Salted Butter, softened

  • 1/2 cup Wegmans White Granulated Sugar

  • 2 cups assorted fruits of your choice (apples, raspberries, blueberries, pears etc.), 1/4-inch dice

  • 1 cup Wegmans Buttermilk Pancake Mix

  • 2/3 cup water

  • 1 tsp Wegmans Organic Pure Vanilla Extract

  • 4 oz (1/2 cup) mascarpone cheese

  • 1/4 cup Wegmans Organic Pure Maple Syrup

Directions

  • Step 1

    Preheat oven to 350 degrees. Butter bottom and inside of 4 (4-inch) ramekins. Pour sugar into one ramekin. Rotate ramekin until all inside surfaces are coated with sugar. Pour remaining sugar into second ramekin and repeat, continuing until all are sugar-coated. Reserve excess sugar.
  • Step 2

    Distribute fruit among ramekins.
  • Step 3

    Combine pancake mix, water, and vanilla in small bowl. Spoon over fruit. Sprinkle with reserved sugar.
  • Step 4

    Place ramekins on center rack of oven. Bake 25-30 min or until centers are firm and tops lightly browned.
  • Step 5

    Mix mascarpone with maple syrup in small bowl. When cobblers are done, remove from oven; top each with a dollop of mascarpone.
