Kasseri is a blend of Sheep and Goat Milk. It has a hint of olives in its flavor. Its texture is first waxy and becomes oily as it reaches room temperature. When making this cheese, the curds are stretched and twisted, then molded and brined to arrest the development, and set aside to dry and age.
