The season for fresh North Carolina shrimp begins in early July each year. As North Carolina’s coastal waters warm in the summer months, the wild shrimp migrate from the deep ocean to the coast and the harvest gets underway. Micah Daniels and her team rely on their network of trawler shrimpers known as “day boaters” from North Carolina to Florida to bring in the finest shrimp of the season. These dayboats go out for a maximum of 24 hours per fishing trip, then return each day to off-load their catch. The day’s catch is quickly processed, sorted, and packed with fresh ice for quick delivery to Wegmans—all within 24 hours of harvest! Shrimp are high in protein, low in fat, low in carbs and naturally filled with healthy minerals and vitamins including iron, and omega-3. No chemicals or preservatives are ever added to this shrimp or even aloud on the boats.

White Shrimp (Litopenaeus setiferus). Brown Shrimp (Farfantepenaues – aztecus). Pink Shrimp – (Panaeus – duorarum).
1. Preheat grill on HIGH. Add shrimp to large bowl; season with salt and pepper. Drizzle with oil; toss to coat. 2. Add shrimp to grill in single layer; close lid. Grill 2-3 min. Turn over. 3. Grill 2-3 min. 4. Remove from grill (130 degrees). 5. Let rest 2 min (145 degrees). 6. Chef Tips: Use nonstick foil if grill grates are too wide. Serve with lemon wedges. Try replacing salt and pepper with any of our Seasoning Shak'rs. Finish by tossing with any of our flavored oils or a drizzle of lemon juice.
