Pat fillet dry. Rub 1/2 Tbsp. extra virgin olive oil on both sides of fillet, season with sea salt. Heat non-stick pan on med-high heat and add fillet skin down. Cook for 3 min and turn fish and cook for 2 min. Turn and cook skin-side down for 30 seconds until internal temp reaches 145F degrees
