This product has an amazing story and history in Spain. 100% Iberico Lomo de Bellota is dry-cured, acorn-fed pork loin. 100% Iberico is the highest classification of Iberico meat. It is unique because of its origins in the microclimate of Valle de los Pedroches, (Cordoba) Spain. The exceptional flavor and texture of this pork loin is due to the purebred pigs roaming freely and eating acorns from October through March, during acorn season known as Montanera. The animals forage in forest pastures for acorns (bellota) from the Encina oak tree, considered the sweetest in Spain. This leads to tender, distinct marbling, nutty flavors, and incredible sweetness of this exquisite product.
