Blueberry Muffins (makes 12 muffins) You will need: 1 package mix 1 large egg ½ cup milk ½ cup vegetable oil 1 tsp vanilla extract 1 cup frozen blueberries Optional: course sugar for topping Preheat oven to 375 degrees F with rack in center. 1. Add muffin mix into mixing bowl. Measure egg, milk, oil and vanilla in separate bowl. Slowly pour ¾ wet ingredients into mixer on LOW until combined. Scrape bowl; mix on MED 1 min. 2. Add remaining wet ingredients; mix on LOW until combined. Fold in blueberries. 3. Line muffin pan with baking cups or use cooking spray. Scoop ¼ cupful’s into each cup. 4. Bake 24-27 min. Cool 5-10 min. Option: Sprinkle muffins with coarse sugar before baking.
