Skate fish have a mildly pronounced flavor, firm flesh and a high collagen content which gives it a unique texture when cooked. The flesh is light beige to pinkish in color but becomes off-white when cooked. Their taste is similar to scallops.

PAN SEARING INSTRUCTIONS: Coat seafood with pan-searing flour. Place pan on heat source. Use high heat for seafood less than 1/2 inch. Use medium-high heat for seafood greater than 1/2 inch. Pour approximately 1 1/2 tsp of olive oil into pan.
