1. Heat pancake griddle to 375°F (medium heat). Lightly grease griddle.2. Whisk pancake mix and water. Measure mix by lightly spooning it into measuring cup and leveling it off. Whisk mix and water. Do not over-mix. Let batter stand 2 minutes. Pour slightly less than 1/4 cup batter per pancake onto griddle.3. Cook 1–1-1/2 minutes per side. For light and fluffy pancakes, flip only once, when tops bubble and bottoms are golden brownHigh Altitude: No adjustment necessary. Reconstitute: For 6–7 4-inch pancakes, use 1 cup mix and 2/3 cup water.For 12–14 4-inch pancakes, use 2 cups mix and 1-1/3 cups water.For 18–21 4-inch pancakes, use 3 cups mix and 2 cups water.For 24–28 4-inch pancakes, use 4 cups mix and 2-2/3 cups water.Tip: For thinner pancakes, add more water. For thicker pancakes, add more mix.
