Pan Searing Instruction: Season fish with salt and pepper; dust with pan searing flour. Heat 1 TBLS olive oil in large pan on medium high. Place fish in pan cool until nicely browned. Turn and cook until temp reaches 130 degrees, baste with1 TBLS Basting Oil and 1 TSP butter until 140 degrees, rest 2 min before serving.
