Keep Refrigerated. HOW TO COOK: Cooking times may vary depending on your equipment. 1. Dust cutlets with flour; pat off excess. Heat 1 ½ tsp oil in skillet on MEDIUM-HIGH, until oil faintly smokes. 2. Add cutlets; sear 2-3 minutes. Turn over when it changes color one-quarter way up from bottom and seared side is lightly browned. 3. Reduce heat to MEDIUM. Cook about 3 minutes (turning as needed), or until internal temperature reaches 165 degrees F. Check by inserting thermometer in thickest part of cutlet. 4. Optional: Finish by cooking to 155 degrees F. Add 1 tsp butter and 1 Tbsp basting oil or olive oil to pan; swirl. Baste with spoon until internal temperature reaches 165 degrees F.
