Directions For Use: 1. Combine 9.52 oz (270 g) Grace Johnny Cake Mix with 2/3 cup mix. Add a little milk at a time until a firm dough is formed. (Set aside a small amount of the dry mix for use during hand kneading). 2. Add more milk as necessary. 3. Divide dough into 16 balls, approx. 1 1/2 tbsp each. 4. Knead each one with floured hands for a few minutes. 5. Press gently with palm of hands and flatten to 3 inch rounds. 6. Fry in oil drain and serve hot. Yields 16.3 inch Johnny cakes. Ideal accompaniment for any Caribbean breakfast including ackee and saltfish, also try wrapping the dough around cheese, peanut butter, apple, chicken or your favorite food, to make a delicious snack.
