Once opened, reseal and store in a cool dry place. HOW TO MAKE: Cooking times may vary depending on equipment. Do not eat raw baking mix. Pancakes (makes about ten 4-inch pancakes): You will need: 2 cups baking mix 1 cup milk 2 eggs 1. Preheat griddle or non-stick skillet to 375 degrees F or MED-HIGH. 2. Stir baking mix, milk, and eggs in medium bowl with wire whisk or fork just until large lumps disappear. DO NOT OVERMIX. 3. Pour batter in ¼ cupfuls onto lightly greased griddle or skillet. 4. Cook until pancakes bubble and bottom is golden brown, about 1 min on each side. Turn only once. Chef Tips: For thicker pancakes, use a little less milk. For thinner pancakes, use a little more milk. Waffles (makes five 7-inch round waffles): You will need: 2 cups baking mix 1 1/3 cups milk 1 egg 2 Tbsp vegetable oil 1. Preheat waffle iron according to iron manufacturer's directions. 2. Stir baking mix, milk, egg, and oil in medium bowl with wire whisk or fork just until large lumps disappear. DO NOT OVERMIX. 3. Cook according to iron directions or until steam slows and waffle is golden brown. Remove carefully. Biscuits : You will need: 2 cups baking mix 2/3 cup milk 3 Tbsp melted butter, cooled Rolled Biscuits (makes about twelve 2-inch biscuits): 1. Preheat oven to 450 degrees F with rack in center. 2. Combine baking mix, milk and melted butter in medium bowl until soft dough forms. 3. Turn dough onto dusted surface, using flour or baking mix. Shape into ball; knead gently 10 times. Roll 1/2-inch thick. 4. Cut with 2-inch diameter cutter dipped in flour. Place on baking sheet. 5. Bake 9-11 min or until golden brown. Drop Biscuits (makes about 12): 1. Preheat oven to 450 degrees F with rack in center. 2. Combine baking mix, milk and melted butter in medium bowl until soft dough forms. 3. Drop by tablespoonful onto lightly greased baking sheet. 4. Bake 9-11 min or until golden brown. Dumplings (makes about 10): You will need: 1 2/3 cups baking mix 2/3 cup fat free milk 1 Tbsp melted butter, cooled 1. Combine baking mix, milk and melted butter in medium bowl until soft dough forms. 2. Drop by spoonful onto boiling stew or soup; reduce heat to simmer. 3. Cook uncovered 10 min. Cover; simmer 10 min more.
