Holiday Dinners

  • Preheat oven to 350°F with rack in center. Remove lid and tape.
  • COOK/ROAST 50-60 minutes to an internal temp of 125°F.
  • Remove roast from & place on plate, tent with foil and let rest 15 minutes (final temp 135°F MED).
  • Discard herbs and pour gravy into pan with mushrooms and shallots.
  • Return to OVEN and heat mushroom sauce in oven for 5 minutes. 
  • Preheat OVEN to 450°F with rack in center. Remove lid and tape.
  • Stand up the racks for roasting by interlocking the bones together.
  • COOK/ROAST about 30 minutes to an internal temp of 130°F MED.
  • Warm the peppercorn sauce in a saucepan on the stove. 
  • Let lamb rest 10 minutes before slicing.  Enjoy with the (heated) peppercorn sauce.

HOW TO WARM TURKEY & SIDES

Warming times may vary depending on your equipment.
Turkey is fully cooked.
Heat sides to 165˚F.
Use caution removing items from oven.

You will need:

  • Large Roasting Pan
  • Aluminum Foil

Give yourself approximately 2 hours for total reheating time. Sides heat while turkey is resting.

Conventional Oven
Preheat oven to 375°F.

  1. Remove turkey from plastic wrapping and remove plastic leg wrap. Place turkey in your roasting pan, breast side up. Add 2 cups water, broth or stock to pan. Cover tightly with foil.
  2. Adjust oven racks with one placed in center and one placed in lowest position.
  3. Warm turkey 1 ½ hours in oven, center rack. (Basting not necessary.)
  4. Carefully remove foil from turkey to allow browning. At this time, remove all sides from refrigeration.
  5. Warm turkey additional 30 minutes (or longer if a warmer serving temperature is desired).
  6. While turkey is finishing warming, remove lids and plastic film from sides; stir thoroughly.
  7. Cover whipped potatoes, macaroni & cheese, and green bean casserole with foil. Keep stuffing uncovered.
  8. Place stuffing and green bean casserole on lowest oven rack the last 10 minutes of the turkey’s cook time.
  9. Remove turkey from oven; tent loosely with foil. (Let rest 30 minutes before carving.)
  10. Adjust center rack to upper third of oven; place potatoes and macaroni & cheese on that rack, keeping stuffing and casserole on lowest rack. Heat all sides 15 minutes.
  11. Carefully remove all sides and stir thoroughly; replace foil.
  12. Rotate position of sides (stuffing and green bean casserole to upper rack, potatoes and macaroni & cheese to lower rack).
  13. Heat additional 15-20 minutes or until thoroughly heated; remove from oven. Stir all sides; top green bean casserole with crispy onions and place back in oven 3-5 minutes to brown. Warm gravy using directions below.

HOW TO WARM GRAVY
Stovetop: Heat in saucepan on MEDIUM stirring occasionally, until simmering and gravy is smooth.
Microwave: Pour gravy into microwave-safe dish; cover loosely. Heat on HIGH 3-6 minutes, stirring twice until hot and gravy is smooth.

Refrigerate all leftovers within 2 hours of serving.

HOW TO WARM RIB ROAST & SIDES
Warming times may vary depending on your equipment.
Rib Roast is raw.
Heat sides to 165˚F.

You will need:

  • Large Roasting Pan
  • Aluminum Foil

Give yourself approximately 2 hours for total heating time. Sides heat while roast is resting.

Conventional Oven
Preheat oven to 350°F.

  1. Remove roast from all wrapping. Place roast in your roasting pan.
  2. Roast rib roast 15 to 20 minutes per pound, depending on preferred doneness. (Rare: 125°F - Medium: 130°F)
  3. Remove rib roast from oven. Let rest for up to 30 minutes before carving.

Raise oven temp to 400°F. Side options vary based on customer selection.

  1. Discard lids and plastic film from sides; stir thoroughly where applicable.
  2. Cover all sides with foil. If purchased, keep potatoes gratin uncovered.
  3. Adjust oven racks with one placed in upper third of oven and one in lower third of oven.
  4. Place sides on lower rack and on upper rack. Heat 15 minutes.
  5. Remove all sides and stir thoroughly where applicable. Re-cover with foil. Keep potatoes gratin uncovered.
  6. Rotate position of sides on upper rack and lower racks.
  7. Heat additional 15-20 min or until thoroughly heated.

NOTE: If you choose to reheat sides in a microwave, move product into your own microwave-safe containers.

HOW TO WARM SAUCE
Stovetop: Heat in saucepan on MEDIUM, stirring occasionally, until simmering and sauce is smooth.

Refrigerate all leftovers within 2 hours of serving.

HOW TO WARM TURKEY & SIDES

Warming times may vary depending on your equipment.
Turkey is fully cooked.
Heat sides to 165˚F.
Use caution removing items from oven.

You will need:

  • 1 Baking Sheet
  • Aluminum Foil
  • Wax Paper

Give yourself approximately 85 minutes for total reheating time. Sides heat while turkey is resting. 

Conventional Oven
Preheat oven to 325°F. Do NOT exceed 325°F.
Adjust oven racks accordingly: place one in the lower third of the oven and one in the center.

  1. Remove turkey from refrigeration 30 minutes prior to heating.
  2. Remove rosemary garnish from turkey platter (set aside).
  3. Replace lid and loosely seal pan; place on center rack.
  4. Remove stuffing from refrigeration at this point, discard plastic lid and stir thoroughly.
  5. Heat turkey (covered) 40 minutes.
  6. Remove turkey and baste with drippings. (Set lid aside).
  7. Add pan of stuffing to a separate baking sheet (do not cover). Place on lower rack.
  8. Return turkey to oven, uncovered.
  9. Heat turkey (uncovered) and stuffing additional 40 minutes.
  10. While turkey and stuffing continue to cook, remove sides from refrigeration, discard plastic lids and stir thoroughly. (Green beans, potatoes, and butternut squash can be microwaved after turkey and stuffing have been heated.)
  11. Remove turkey and stuffing from oven (use caution with turkey, juices are HOT). Baste turkey with drippings; place lid loosely over turkey. Let rest 10 minutes.
  12. While turkey is resting, warm gravy using directions below.
  13. To heat sides: Cover potatoes, green beans, and butternut squash with wax paper. Microwave each on HIGH 3-4 minutes, stirring halfway through, until thoroughly heated. Stir thoroughly before serving.
  14. Garnish turkey with rosemary before serving.

HOW TO WARM GRAVY
Stovetop: Heat in saucepan on MEDIUM, stirring occasionally, until simmering and gravy is smooth.
Microwave: Pour gravy into microwave-safe dish; cover loosely. Heat on HIGH 3-6 minutes, stirring twice until hot and gravy is smooth.
*Items can be kept warm in 325˚F oven for up to 10 minutes. Place containers on baking sheets for easy transport.

Refrigerate all leftovers within 2 hours of serving.

HOW TO WARM TURKEY & SIDES

Heat sides to 165˚F.
Use caution removing items from oven.

You will need:

  • Aluminum Foil

Conventional Oven
Preheat oven to 325°F.
Adjust oven racks accordingly: place one in the lower third of the oven, one in the center, and one in the top third.

  1. Remove turkey and sides from refrigeration 30 minutes prior to heating, discard plastic lids and stir sides thoroughly.
  2. Remove rosemary garnish from turkey platter (set aside). Replace lid and loosely seal pan.
  3. Cover potatoes with foil, keep stuffing uncovered. Place each on lower rack.
  4. Cover butternut squash; add ½ cup water to green beans; cover. Place each on upper rack.
  5. Place turkey on center rack (covered).
  6. Heat all items 40 minutes.
  7. Remove turkey from oven, baste with drippings. Set lid aside (turkey will finish heating uncovered).
  8. Remove all sides. Stir each thoroughly, replace foil.
  9. Rotate position of sides, (potatoes & stuffing to upper rack, butternut squash & green beans to lower rack).
  10. Heat all items additional 40-45 minutes.
  11. Remove all sides from oven; stir thoroughly before serving.
  12. Remove turkey from oven (use caution, juices are HOT). Baste turkey with drippings; place lid loosely over turkey. Let rest 10 minutes.
  13. Warm gravy using directions below, while turkey is resting.
  14. Garnish turkey with rosemary before serving.

Ham is fully cooked.
Heat sides to 165˚F.

You will need:

  • Large Roasting Pan
  • Aluminum Foil

Give yourself approximately 2 hours for total reheating time. Sides heat while ham is resting.

Conventional Oven
Preheat oven to 350°F.

  1. Remove ham from plastic wrapping and remove bone guard, if applicable. Place ham in your roasting pan, sliced side down. Add 1/2 cup of water. Cover tightly with foil.
  2. Warm ham 1 1/2 hours (approximately 10-11 minutes per pound).
  3. Warm ham additional 30 minutes (or longer if a warmer serving temperature is desired).
  4. Remove ham from oven; keep covered. Let rest 30 minutes before slicing.

NOTE: If you choose to reheat sides in a microwave, move product into your own microwave safe containers.

Refrigerate all leftovers within 2 hours of serving.

  • Preheat oven to 350°F. Loosen the lid on the pan and place onto center rack.
  • While ham is in the oven, pour glaze into a small saucepan, heat on MED-LOW for 7-9 minutes or until sauce is hot.
  • Remove ham from oven, brush ham with ¼ cup of warmed sauce.
  • Switch oven to broil and place ham on rack positioned in the upper 1/3 oven the oven.
  • Broil for 2-3 minutes or until lightly caramelized.

Gold Pan Entrees & Sides

*IMPORTANT NOTE: All items listed below are in the oven ready pan/tray to be used in conventional ovens only. Cooking times may vary for all items.

  • Remove wrap.
  • Bake at 350°F, 15-20 min per pound until internal temp: 125°F (rare), 130°F (medium), 145°F (well).
  • Rest 10 min before slicing.
  • Preheat oven 400°F.
  • Remove lid and tape.
  • Cook for 20-25 min.
  • Season to taste.
  • Stir vegetables to coat with butter and enjoy!
  • Preheat oven 400°F.
  • Remove lid. Add 1/4 cup water to pan.
  • Cook about 20 min.
  • Stir vegetables and enjoy!
  • Preheat oven 400°F.
  • Remove wrap and cups of cheese.
  • Cook about 50 min.
  • Mix in cheese and oil before serving.
  • Preheat oven 350°F.
  • Remove lid and tape.
  • Pour sauce over chicken.
  • Cook 40-45 min, rotate pan halfway through and cook until internal temp 165°F.
  • Preheat oven 350°F.
  • Remove lid and tape.
  • Pour sauce over chicken.
  • Cook 50-55 min, rotate pan halfway through and cook until internal temp 165°F.
  • Preheat oven 400°F with rack in center.
  • Remove lid and tape.
  • Cook 30 min or internal temp of 165°F.
  • Heat marinara sauce per package directions and serve with meal.
  • Remove wrap.
  • Pour one bottle of sauce in each pan.
  • Bake at 350°F degrees for 30 min.
  • Remove crab legs from pan, set aside on sheet pan.
  • Stir pan, mixing all ingredients well.
  • Return to oven and bake additional 10 min or until internal temp of seafood reaches 145°F and internal temp of potatoes reaches 165°F.
  • Preheat oven 350°F with rack in center.
  • Remove lid and tape.
  • Pour sauce evenly over each piece of cod.
  • Cook 30 min (or internal temp 130°F, rest 2 min, final temp 145°F).
  • Preheat oven 350°F with rack in center.
  • Remove lid and tape.
  • Pour sauce evenly over each piece of cod.
  • Cook 40-45 min (or internal temp 130°F, rest 2 min, final temp 145°F).
  • Preheat oven 350°F.
  • Remove Lid.
  • Cook 30 min (internal temp 130°F, rest 2 min, final temp 145°F).
  • Heat sauce in saucepan until hot, stirring occasionally.
  • Serve sauce on salmon and broccoli.

Everyday Entrees & Sides

IMPORTANT NOTE: All items are in the oven-ready pan/tray to be used in conventional ovens only. If you choose to reheat items in a microwave, please place product into your own microwave safe container. Heating times may vary for all items.

  1. Preheat oven to 350°F. Place catering pan on sheet tray, loosen lid but keep pan covered.

  2. While arancini is in oven, place sauce in a pot on medium low heat for 5-7 minutes or until 165°F, stirring occasionally.

  1. Preheat oven to 350°F. Remove lid, cover pan loosely with foil and place pan on a baking sheet.
  2. Bake for 30-35 minutes or until internal temperature reaches 165°F.

1. Preheat oven to 350°F. Remove lid and place pan on baking sheet.

2. Open sauce and pour evenly over pan and cover pan with foil.

3. Bake 30 minutes or until internal temperature reaches 165°F.

  1. Preheat oven to 350°F. Remove lid and sauce from platter and spread tenders evenly around platter.
  2. Bake for 20-25 minutes or until an internal temperature reaches 165°F.
  1. Preheat oven to 325°F with rack in center. Remove lid and place pan on baking sheet; stir squash to loosen.
  2. Heat 50-55 minutes or until internal temperature reaches 165°F, stirring occasionally.

  2. Heat 60-70 minutes or until internal temperature reaches 165°F, stirring occasionally.

  1. Preheat oven to 350°F; remove Chicken Wings, Tenders or Bites from package. Place in a single layer on your own baking sheet.
  2. Bake uncovered for approximately 10-15 minutes.
  1. Preheat oven to 350°F. Once oven is preheated to 350°F, place foil pan with foil lid on baking sheet. Place baking sheet with foil pan in oven on center rack.
  2. Bake at 350°F for 45-60 minutes. Product must reach an internal temperature of 165° F. Let rest for 20-25 minutes before serving.

  2. Bake for 35-40 minutes or until internal temperature reaches 165°F.

  5. Serve and enjoy! Refrigerate leftovers promptly.
