Holiday Dinners

HOW TO WARM TURKEY & SIDES

Warming times may vary depending on your equipment.
Turkey is fully cooked.
Heat sides to 165˚F.
Use caution removing items from oven.

You will need:

  • Large Roasting Pan
  • Aluminum Foil

Give yourself approximately 2 hours for total reheating time. Sides heat while turkey is resting.

Conventional Oven
Preheat oven to 375°F.

  1. Remove turkey from plastic wrapping and remove plastic leg wrap. Place turkey in your roasting pan, breast side up. Add 2 cups water, broth or stock to pan. Cover tightly with foil.
  2. Warm turkey 1 ½ hours in oven, center rack. (Basting not necessary.)
  3. Carefully remove foil from turkey to allow browning. At this time remove all sides from refrigeration.
  4. Warm turkey additional 30 minutes (or longer if a warmer serving temperature is desired).
  5. While turkey is finishing warming, remove lids and plastic film from sides; stir thoroughly.
  6. Cover whipped potatoes, sweet potatoes, and green bean casserole with foil (set crispy onions aside). Keep stuffing uncovered.
  7. Remove turkey from oven; tent loosely with foil. (Let rest 30 minutes before carving.)
  8. Adjust oven racks with one placed in upper third of oven and one in lower third of oven.
  9. Place stuffing and green bean casserole on lower rack; place both potatoes on upper rack. Heat 15 minutes.
  10. Remove all sides and stir thoroughly. Re-cover with foil.
  11. Rotate position of sides (stuffing and green bean casserole to upper rack, potatoes to lower rack).
  12. Heat additional 15-20 minutes or until thoroughly heated; remove from oven. Stir all sides; top green bean casserole with crispy onions. Warm gravy using directions below.

HOW TO WARM GRAVY
Stovetop: Heat in saucepan on MEDIUM stirring occasionally, until simmering and gravy is smooth.
Microwave: Pour gravy into microwave-safe dish; cover loosely. Heat on HIGH 3-6 minutes, stirring twice until hot and gravy is smooth.

Refrigerate all leftovers within 2 hours of serving.

HOW TO WARM RIB ROAST & SIDES
Warming times may vary depending on your equipment.
Rib Roast is raw.
Heat sides to 165˚F.

You will need:

  • Large Roasting Pan
  • Aluminum Foil

Give yourself approximately 2 hours for total heating time. Sides heat while roast is resting.

Conventional Oven
Preheat oven to 350°F.

  1. Remove roast from all wrapping. Place roast in your roasting pan.
  2. Roast rib roast 15 to 20 minutes per pound, depending on preferred doneness. (Rare: 125°F – Medium: 130°F)
  3. Remove rib roast from oven. Let rest for up to 30 minutes before carving.

Raise oven temp to 400°F. Side options vary based on customer selection.

  1. Discard lids and plastic film from sides; stir thoroughly where applicable.
  2. Cover all sides with foil. If purchased, keep potatoes gratin uncovered.
  3. Adjust oven racks with one placed in upper third of oven and one in lower third of oven.
  4. Place sides on lower rack and on upper rack. Heat 15 minutes.
  5. Remove all sides and stir thoroughly where applicable. Re-cover with foil. Keep potatoes gratin uncovered.
  6. Rotate position of sides on upper rack and lower racks.
  7. Heat additional 15-20 min or until thoroughly heated.

NOTE: If you choose to reheat sides in a microwave, move product into your own microwave-safe containers.

HOW TO WARM SAUCE
Stovetop: Heat in saucepan on MEDIUM, stirring occasionally, until simmering and sauce is smooth.

Refrigerate all leftovers within 2 hours of serving.

HOW TO WARM TURKEY & SIDES

  • Aluminum Foil

Give yourself approximately 65 minutes for total reheating time.

Conventional Oven
Preheat oven to 325°F. Do NOT exceed 325°F.
Adjust oven racks accordingly: lower third of oven, center, upper third

  1. Remove turkey and all sides from refrigeration 30 minutes prior to heating, remove all plastic lids/film and stir sides thoroughly. (Green beans can be microwaved prior to serving.)
  2. Remove rosemary garnish from turkey platter (set aside). Cover loosely with foil and place onto baking sheet.
  3. Arrange pan of potatoes & butternut on same baking sheet; cover loosely with foil. Place on upper rack.
  4. Add pan of stuffing to a separate baking sheet (do not cover). Place on lower rack.
  5. Place turkey (with baking sheet) on the center rack.
  6. Heat all items 25 minutes.
  7. Remove all sides; stir each thoroughly. Re-cover with foil.
  8. Rotate position of sides (stuffing to upper rack, potatoes & butternut to lower rack).
  9. Continue to heat 15 minutes. Remove foil from turkey, heat additional 10 minutes.
  10. Remove all items from oven, tent loosely with foil and let rest 10 minutes.
  11. While turkey is resting, warm gravy using directions below.
  12. To heat green beans, cover with wax paper and microwave on HIGH 3-4 minutes.
  13. Garnish turkey with rosemary before serving.

HOW TO WARM GRAVY

  2. Remove rosemary garnish from turkey platter (set aside). Cover loosely with foil and place onto baking sheet.
  3. Add pan of stuffing to a separate baking sheet (do not cover). Place on lower rack.
  4. Place turkey (with baking sheet) on the center rack.
  5. Heat both items 35 minutes.
  6. Remove foil from turkey, heat additional 10 minutes.
  7. Remove turkey and stuffing from oven. Tent loosely with foil and let rest 10 minutes.
  8. While turkey is resting, warm gravy using directions below.
  9. To heat sides: Cover potatoes, green beans, and butternut squash with wax paper. Microwave each on HIGH 3-4 minutes, stirring halfway through, until thoroughly heated. Stir thoroughly before serving.
  10. Garnish turkey with rosemary before serving.

HOW TO WARM GRAVY
Stovetop: Heat in saucepan on MEDIUM, stirring occasionally, until simmering and gravy is smooth.
Microwave: Pour gravy into microwave-safe dish; cover loosely. Heat on HIGH 3-6 minutes, stirring twice until hot and gravy is smooth.

*Items can be kept warm in 325˚F oven for up to 10 minutes. Place containers on baking sheets for easy transport.

Refrigerate all leftovers within 2 hours of serving.

  2. Remove rosemary garnish from turkey platter (set aside). Cover loosely with foil and place onto baking sheet.
  3. Cover potatoes with foil, keep stuffing uncovered. Place each on lower rack.
  4. Cover butternut squash; add ½ cup water to green beans; cover. Place each on upper rack.
  5. Heat sides 15 minutes.
  6. Place turkey (with baking sheet) on center rack.
  7. Heat all items 30 minutes.
  8. Remove all sides; stir each thoroughly. Re-cover with foil.
  9. Rotate position of sides (potatoes and stuffing to upper rack, butternut squash and green beans to lower rack).
  10. Heat all items additional 30 minutes. Remove foil from turkey; continue to heat about 10 minutes.
  11. Remove turkey from oven, baste with drippings and tent loosely with foil.
  12. While turkey is resting, continue to heat sides additional 15 minutes or until thoroughly heated, and warm gravy using directions below.
  13. Remove all sides from oven; stir thoroughly before serving.
  14. Garnish turkey with rosemary before serving.

HOW TO WARM GRAVY

HOW TO WARM TURKEY

For Whole Turkey (serves 12): Give yourself approximately 80 minutes for total reheating time.

For Half Turkey (serves 6): Give yourself approximately 40 minutes for total reheating time.

 Conventional Oven
Preheat oven to 325°F.
Adjust oven rack to center.

  1. Remove turkey from refrigeration 30 minutes prior to heating.
  2. Remove plastic lid & rosemary garnish from turkey platter (set aside). Place platter onto large, rimmed baking sheet.
  3. Place turkey (with baking sheet) on center rack.
  4. Heating Times:
    1.  For Whole Turkey: Heat 40 minutes. Remove turkey and baste with drippings. Cover loosely with foil and heat additional 30-40 minutes.
    2.  For Half Turkey: Heat 30 minutes. Remove turkey and baste with drippings. Cover loosely with foil and heat additional 10 minutes.
  5. Remove turkey from oven (use caution, juices are HOT). Baste turkey with drippings and tent loosely with foil. Let rest 10 minutes.
  6. Garnish turkey with rosemary before serving.

Refrigerate all leftovers within 2 hours of serving.

Chef Tip: Reserve turkey drippings for gravy.

HOW TO WARM HAM & SIDES
Warming times may vary depending on your equipment.
Ham is fully cooked.
Heat sides to 165˚F.

You will need:

  • Large Roasting Pan
  • Aluminum Foil

Give yourself approximately 2 hours for total reheating time. Sides heat while ham is resting.

Conventional Oven
Preheat oven to 350°F.

  1. Remove ham from plastic wrapping and remove bone guard, if applicable. Place ham in your roasting pan, sliced side down. Add 1/2 cup of water. Cover tightly with foil.
  2. Warm ham 1 1/2 hours (approximately 10-11 minutes per pound).
  3. Warm ham additional 30 minutes (or longer if a warmer serving temperature is desired).
  4. Remove ham from oven; keep covered. Let rest 30 minutes before slicing.
  5. Discard lids and plastic film from sides; stir butternut squash and cauliflower & spinach gratin thoroughly.
  6. Cover butternut squash and cauliflower & spinach gratin. Keep potatoes gratin uncovered.
  7. Adjust oven racks with one placed in upper third of oven and one in lower third of oven.
  8. Place cauliflower & spinach gratin and potato gratin on lower rack; place butternut squash on upper rack. Heat 15 minutes.
  9. Remove all sides and stir butternut squash and cauliflower & spinach gratin thoroughly. Re-cover butternut squash and cauliflower & spinach gratin with foil. Keep potato gratin uncovered.
  10. Rotate position of sides (cauliflower & spinach gratin and potatoes gratin on upper rack, butternut squash on lower rack).
  11. Heat additional 15-20 min or until thoroughly heated. Stir butternut squash and cauliflower & spinach gratin.

NOTE: If you choose to reheat sides in a microwave, move product into your own microwave-safe containers.

Refrigerate all leftovers within 2 hours of serving.

Everyday Entrees & Sides

  1. Preheat oven to 350°F. Remove lid, cover pan loosely with foil and place pan on a baking sheet.
  2. Bake for 30-35 minutes or until internal temperature reaches 165°F.
  1. Preheat oven to 325°F with rack in center. Remove lid and place pan on baking sheet; stir squash to loosen.
  2. Heat 50-55 minutes or until internal temperature reaches 165°F, stirring occasionally.

For smaller portions: Microwave: Remove lid and label, heat for 3-5 minutes on high. Heating times may vary.

  1. Preheat oven to 325°F with rack in center. Remove lid and place pan on baking sheet; stir cauliflower to loosen.
  2. Heat 60-70 minutes or until internal temperature reaches 165°F, stirring occasionally.

For smaller portions: Microwave: Remove lid and label. Microwave 3 minutes on high, stir gratin and microwave for an additional 3 minutes. Heating times may vary.

  1. Preheat oven to 375°F. Remove label, lid, salsa, and lime crema from tray.
  2. Bake from 10 minutes or until hot.
  1. Preheat oven to 400°F. Remove lid and place platter on a baking sheet.
  2. Bake for 10-15 minutes or until internal temperature reaches 165°F.

For smaller portions: Microwave: Remove lid and label, heat for 2-3 minutes on high. Oven: Preheat oven to 400˚F. Remove chicken from package and place on a baking sheet pan. Bake for 5-7 minutes. Heating times may vary.

  1. Preheat oven to 350°F. Remove lids and place pans on baking sheets.
  2. Open lemon butter sauce and pour evenly over each pan and cover each pan with foil.
  3. Bake 40-45 minutes or until internal temperature reaches 165°F.
  1. Preheat oven to 400°F. Remove lid, cover pan with foil and place pan on a baking sheet.
  2. Bake 40 minutes or until internal temperature reaches 165°F and the cheese is melted.

For smaller portions: Microwave: Remove lid and label, heat for 2-3 minutes. Oven: Preheat oven to 400°F. Remove chicken from package and place on a baking sheet pan. Bake for 5-7 minutes. Heating times may vary.

(Cold Upon Special Request)

  1. Preheat oven to 350°F; remove Chicken Wings, Tenders or Bites from package. Place in a single layer on your own baking sheet.
  2. Bake uncovered for approximately 10-15 minutes.
  1. Preheat oven to 400°F. Remove lid, cover pan with foil and place pan on a baking sheet.
  2. Bake for 20-30 minutes or until internal temperature reaches 165°F.
  1. Preheat oven to 350°F. Remove lid and place pan on a baking sheet.
  2. Bake for 35-40 minutes or until internal temperature reaches 165°F.
  1. Preheat oven to 325°F. Remove lid and place pan on a baking sheet; stir stuffing to loosen.
  2. Bake for 55-60 minutes or until internal temperature reaches 165°F, stirring halfway through.

For smaller portions: Microwave: Remove lid and label, heat for 2-3 minutes on high. Fluff with fork. Heating times may vary.

Microwave: Remove lid and label, remove sauce cup and pour sauce over ham if desired. Heat for 2 minutes on high. Heating times may vary.

Remove label, lid, and souffle cups. Pour gravy over turkey and potatoes. Microwave for 1-2 minutes on high or to 165°F. Heating times may vary.

  4. Carefully remove from the microwave; remove paper towel and serve with sauce on the side.

  3. Pour 8 oz of Wegmans Culinary Chicken Stock over turkey (may use water or chicken broth as a substitute).
  4. Cover tray with foil and bake for 15 minutes.
  5. Uncover and bake for an additional 10 minutes. Add garnish back to tray and serve.
