This member of the gourd family was cultivated in Central America as far back as the ancient Aztecs and Mayans. It has a taste and texture somewhere between cucumber and zucchini. Pear-shaped with smooth skin, it ranges in color from light green to dark apple green. Selection: Look for small, firm, unblemished squash. Storage: Refrigerate for up to one week.
