Heritage: Introduced in New York City in 1894; newly popular for its versatility and striking appearance. Flavor: A combination of corn, butternut squash, and sweet potato. Try it: Unlike other winter squash, skin is thin enough that it becomes tender when cooked and can be eaten. Delicata has a creamy-white or yellow ridged skin that's highlighted with green streaks. Its soft flesh has a delicate, very sweet flavor (which some compare to a sweet corn). The thin rind is edible, particularly after roasting. The Delicata is perfect for stuffing when split in half, thanks to its deep, boat-like cavity.
How to cut: 1. Lay squash on cutting board and hold stem end. 2. Insert sharp knife into center of squash, pushing all the way through. 3. With a downward motion, cut toward blossom end. Rotate squash and hold cut end. 4. Using prior cut as a starting point, insert knife and cut in downward motion toward stem end. Separate squash into two halves.
