Plums range in shape (from oval to round), size (from 1 to 3 inches in diameter) and color (yellow, green red, purple and shades in between). Like peaches, they are freestone or clingstone. All plums have smooth skin and a center pit. Flavors range from very sweet to tart-sweet. Selection: Choose firm, plump plums that give slightly to palm pressure. Avoid cracks, soft spots or brown discoloration. Plums finish ripening off the tree, so fruit can be purchased ready to eat or slightly firm for ripening at home. Leave at room temperature to ripen, then refrigerate.
