Wash before using. Keep refrigerated. How to cook: Cooking time may vary depending on your equipment. Steam: Place about 2 inches of water in steamer and bring to a boil. Place sliced or whole broccoletti in basket. Cover and steam 4-8 minutes or until desired doneness. Carefully remove broccoletti and season to taste. Blanching and Shocking: Bring 4 quarts salted water to boil in large pot on HIGH. Add sliced or whole broccoletti carefully to pot. Cook 3-4 minutes or until desired doneness; drain. If finishing preparation late, shock by transferring broccoletti to bowl of ice water 2-3 minutes until cool, drain and refrigerate. If ready to serve, season to taste. Try our Pan-Steamed Technique: Heat 1/4 cup olive oil, 2 teaspoons chopped garlic, , 1 anchovy fillet on MEDIUM-LOW . Cook, stirring 2-3 minutes until anchovy is dissolved. Raise heat to HIGH. Add sliced or whole broccoletti , 1/2 cup water and 1 teaspoon salt; stir. Bring to simmer; cover. Cook, stirring occasionally about 8 minutes or until water is evaporated. Season to taste with black pepper. Chef Tips: Drizzle with extra-virgin olive oil or melt finishing butter over top. Blanched broccoletti can be used for a stir-fry.
