Keep Refrigerated. How to Cook: How to Cook Cooking times may vary depending on your equipment. Blanching and Shocking: Bring 4 Quarts salted water to boil in a large pot on HIGH. Add kale carefully to pot. Cook 5-7 minutes or until desired doneness; drain. If finishing preparation later, shock by transferring greens to bowl of ice water 2-3 minutes until cool, drain and refrigerate. If ready to serve, season to taste. Try our Cooked Kale Technique: Bring one gallon and 3 1/2 tbsp. salt to boil in large stockpot. Add 1 tsp minced garlic and kale; return water to a boil. Simmer 4-6 min. Strain greens onto plate, retaining a small amount of cooking water. Serve with drizzle or cooking water, squeeze of fresh lemon juice and if desired, sprinkle with grated Parmigano-Reggiano cheese. Chef Tips: Try drizzling cooked greens with finishing oil and a sprinkle of red pepper flakes. Add to smoothies, salads, and soups.
