You Will Need: 1 lb lean ground beef; 1 - 15 oz can pinto or kidney beans, drained; 1 - 28 oz can diced tomatoes. Directions: 1. In a large saucepan, thoroughly cook ground beef. Drain, returning beef to pan. 2. Add beans and tomatoes to ground beef. 3. Mix contents into beef mixture, bring to a boil, then simmer for 10 minutes or until desired thickness is reached. Makes about 6 servings. Chef Suggests: Top with favorites such as jalapenos, diced onions, shredded cheese or sour cream. Serve on baked potato with shredded cheese, sour cream, diced jalapeno and cilantro.
