You Will Need: 16 oz can chickpeas; 1/4 cup olive oil; 2 tablespoons lemon juice. Directions: 1. In a food processor mix contents of package with 16 oz can chickpeas, drained and rinsed and 1/4 cup olive oil. 2. Puree on high for 5 minutes, scraping the sides halfway through. 3. Add 2T water and 2T lemon juice and puree for 1-2 minutes. 4. Set aside for 30 minutes to let flavors develop. Serve with pita chips, fresh vegetables or use in pita sandwiches. Chef Suggests: For a special event, make your own pita chips. Brush each pita with olive oil and sprinkle with salt and pepper, slice into 8 wedges and bake at 375 degrees F for 10 minutes.
