The Italian word penne actually means pens or feathers (from which quill-type pens were once made) and rigate means ridged. The ridged and pointed tubular shape of penne (say peh-neh) pasta is great to carry thicker sauces. This pasta is extruded through a bronze dye giving it a rough texture to better hold the sauce. Italian Classics Penne, imported from the Puglia region, is designed to hold its shape! We start with the finest organic wheat from the Puglia plains in Italy to create this protein-rich durum wheat, which is gently ground and sifted to create a hearty semolina flour. The resulting pasta keeps its shape in cooking. It becomes what Italians call al dente (meaning to the tooth) pasta which offers a slight resistance when bitten into, but doesn't get soft, break or tear. When you see organic on the label you'll know the food is also produced in greater harmony with nature, without using synthetic pesticides or fertilizers. How to Cook: Cooking times may vary depending on your equipment. Pasta approximately doubles in volume during cooking. Stovetop: 1. Bring 4 quarts water to a rapid boil (salt if desired). 2. Add desired amount of pasta to boiling water. Reduce heat to gentle boil. 3. Cook 13 minutes (al dente) to 15 minutes or until desired tenderness, stirring occasionally. 4. Drain carefully. Serve with your favorite sauce. If using for a salad, cool immediately under cold running water. Estimate 3/4 cup dried pasta per serving. Store in a cool, dry place and use by the date stamped on the end flap.
