Lentil penne. Serves 4. Ready in less than 15 minutes. Kit Includes: vegetables; pesto sauce; citrus herb seasoning. Penne made from green lentils. Per Serving: 22 g protein; 6 g fiber. Step by Step Prep: It's easy! Boil penne and vegetables in a large pot for 8-9 minutes, stirring occasionally (expect some foam). Drain, do not rinse. Mix sauce in a small bowl with 1/2 cup water and 1/3 cup olive oil. Toss penne and vegetables with sauce; let stand for 2 minutes. Sprinkle with seasoning as desired - it's a lot of flavor! Voila! Dinner is served! Make it Your Own: Top with rotisserie chicken or salmon. Or, after draining, add sauce, 2 tbsp chopped kalamata olives, and 1/4 cup sundried tomatoes. Top with grated parmesan cheese.
