Makes 4 servings. Cooks in 30 minutes. 3 Simple Steps: Cook jasmine rice. Saute purchased chicken & add custom spice blend. Serve in four dishes & enjoy with veggies. What You Need: 1.25 lbs boneless, skinless chicken breast (about 2); 1 tbsp vegetable oil; 3 cups water; veggie of your choice (we prefer zucchini). Don't want chicken? Also tastes great with extra firm tofu. Cook as instructed in step 2. Just add chicken. Cooking Instructions: 1. Cook Rice: In a medium pot, bring 2 cups water to boil. Stir in rice and return to boil. Cover & reduce heat to low. Without stirring, simmer for 15-20 minutes, or until water is absorbed. Remove from heat & leave covered for 5 minutes. Meanwhile, start cooking veggies (Veggie Pairing: This meat pairs well with many veggies. We prefer zucchini). 2. Cook Chicken: Cut chicken into 1-inch pieces. Preheat 1 tbsp vegetable oil in saute pan over medium-high heat. Add chicken & saute until cooked through (about 8 minutes). Add 1 cup water & spice blend to pan. Stir well. Reduce heat to medium & cook until sauce thickens. Remove from heat. 3. Serve & Enjoy: Fluff cooked rice with fork & divide into 4 dishes. Spoon chicken & sauce over rice. Serve with optional veggies. Enjoy!
