Keep refrigerated. How to Roast: Preheat oven to 375 degrees F. 1. Prepare Chicken - Remove giblets. Rinse chicken with cold water, inside and out. Pat dry with paper towel. 2. Seasonings - Place chicken on wire rack in roasting pan. (Tip: Line roasting pan with foil for easier cleanup.) Bend wing tips behind the neck to secure. Season chicken on all sides with salt & black pepper to taste. Cross bottom of leg bones together in front of cavity opening and truss with cooking twine. 3. Roast - Place in oven and roast, uncovered, 18-20 minutes per pound. The minimum internal temperature should be 165 degrees F. To check for doneness; insert an instant read thermometer halfway into the thickest part of the upper thigh area closest to the body cavity (be careful not to hit the bone). 4. Carving - Let chicken sit 15 minutes before cutting to allow juices to set. Cook to internal temperature of 165 degrees F to ensure juicy and tender chicken. Use a digital thermometer.
