Pan Sear: Preheat oven to 350 degrees F if cutlets are thicker than 1/2 inch. Heat 1 Tbsp olive oil in ovenproof skillet on MEDIUM; add chicken. Sear 9-10, turn over (if thicker than 1/2 inch, place skillet in oven). On stove top, reduce heat to MEDIUM-LOW. Cook 10-15 min, until internal temperature reaches 165 degrees F (check by inserting thermometer halfway into thickest part of cutlet). "
