Keep refrigerated. Do not microwave in package. How to cook: Cooking times may vary depending on your equipment. Cook thoroughly to final temperature of 150 F. Grill: Preheat grill on HIGH. Sear meat 2-3 minutes. Turn over; sear 2-3 minutes, turn over again. Reduce heat to MEDIUM; close cover and cook to 5 degrees below desired internal temperature, 5-10 minutes. Remove from grill and let rest 5-10 minutes. Slice thinly against the grain. Pan Sear: Dust meat with flour; pat off excess. Heat oil in pan on MEDIUM-HIGH on stovetop until oil faintly smokes; add meat. Sear 1-2 minutes. Turn over; sear 1-2 minutes. turn over again. Reduce heat to MEDIUM and cook to 5 degrees below desired internal temperature (see doneness guide), 5-10 minutes. Remove from pan and let rest 5-10 minutes. Slice thinly against the grain.
