In This Pack: Sri Lankan curry paste; dried chili & spice; coconut milk. Simply Add: 1-1/2 lb cubed chicken; 1 medium onion; 1 tomato. Restaurant quality. Easy to cook! Make it mild or make it hot (Spice it how you like! Leave out those spicy dried chilies for a mild curry. If you like it hot, chop up the dried chilies before adding them). Makes 4 servings. Ingredients

Sri Lankan Curry Paste: Shallots, Garlic, Spices (Including Turmeric and Chili Powder), Rice Vinegar, Soybean Oil, Salt, Ginger, Lemon Grass. Coconut Milk: Coconut Milk, Water, Guar Gum. Spice Packet: Cinnamon, Red Chili Pepper, Cardamom.

Directions

Recipe Guide: Simply Add: 1-1/2 lb boneless chicken thighs or breast, cut into 1 inch cubes; 1 tbsp canola or vegetable oil; 1 medium onion, finely chopped; 1 tomato, chopped. Step 1: In a medium saucepan, heat oil over medium-high heat. Add onions and the dried chili & spice (Spice it how you like! Leave out those spicy dried chilies for a mild curry. If you like it hot, chop up the dried chilies before adding them). Cook onions while stirring occasionally for about 4 minutes or until softened. Step 2: Add Sri Lankan curry paste to onions and cook, stirring, for about a minute until it smells yummy. Add chicken and cook for about 2 minutes until chicken starts to change color. Stir in tomato and 2 tbsp of water. Reduce heat to low, cover and simmer for 15 minutes. Stir occasionally to prevent sticking. Step 3: Add the creamy coconut milk and simmer, uncovered, for another 20 minutes to thicken the sauce. Enjoy! Serving Suggestion: Serve with steamed rice. Marion's Sri Lankan Meal Ideas: Add vegetables (eg cauliflower, green beans, peas or eggplant) along with the chicken.
