Add 280 ml (1/2 pint) of cold water and whisk until a smooth batter is formed. Dry fish, chicken or vegetables and lightly dust with flour. Dip in the batter to coat fully. Deep fry in hot fat or oil 170C/350F until golden. Drain on kitchen paper before serving. Store in a cool dry place.
