Chilli (35 %), Garlic (23%), Shallot (20%), Salt (7%), Lemon Grass (6 %), Spices (5%), Sugar (3%), Galangal (1%).


Stir 1 can red curry paste with 2 cups coconut milk over medium heat for mins, put in 1.5 lbs. meat. then pour in 2-3 cups chicken broth or water, keep boiling. add 10 oz for eggplant, 3 tbsp, fish sauce until cooked, garnish with sweet basil leaves and sliced fresh chilli (serves 9).
