Oysters should be washed and scrubbed thoroughly under cold water, and chilled in the freezer for about an hour. Discard any that are not tightly closed. Place an oyster with the flatter shell up on a folded, heavy dishtowel on the table. Fold the end of the dishtowel over the oyster so that only the hinge (pointed end) is showing and facing you. (The towel is to keep the oyster from slipping, and to protect your hand.) Press down on the oyster in the towel with one hand. Hold the Oyster Knife in your other hand, and place the tip of the blade in the hinge. Look for a spot where there's a valley between the shell halves. If it crumbles, move to another spot. Wedge the tip of the blade into the hinge. Push and twist the Knife until the hinge separates. Push the blade into the oyster, and slide it forward to cut the muscle. Open the oyster and slide the blade under the meat of the top half to cut the muscle and meat away from the shell. Do the same with bottom half. With the tip of the Knife pick out any bits of shell. (Try to save the juice.) Opening the oysters gets easier with practice.
