Clam Fritters or Puffs: 1 egg; 2 6.5-oz tins chopped clams or 1 c. cooked, minced clams (reserve 2 tbsp juice); 2 tbsp milk; 1 pkg. Clam Fritter Mix; canola oil. In mixing bowl, beat egg, then add reserved clam juice and milk. Add drained clams and Clam Fritter Mix to the liquid mixture, and stir until blended. For Fritters: Divide mixture into four equal portions and shape into cakes. Place in refrigerator for half-hour. Place chilled fritters in hot oil, and carefully flatten to about 1/2-inch thick. Fry until golden brown on each side. Drain on paper towels. Serve as a sandwich or as a main course, garnished with salsa-mayonnaise dip. Yield: Four fritters. For Clam Puffs: Pour canola oil to a depth of 1/2-inch in a deep pan, and heat to medium high or 350 degrees. Drop spoonfuls of batter into hot oil. Fry until golden brown on each side. Drain on paper towels. Serve with your favorite dipping sauce. Yield: 14 to 20 puffs.
