Preparation: 1. Combine contents of falafel mix with 1-1/4 cups water. Let stand 10 minutes (If mixture stands too long, patties will be difficult to form and may break apart). 2. Quickly form falafel mixture into 12 patties, each 2 inches in diameter and 1/2-inch thick. 3. In large 10-inch skillet, heat 1/3 cup olive oil or vegetable oil over medium heat 3 to 5 minutes. 4. Cook patties about 4 minutes on each side, or until evenly golden brown and crisp. Serve with cucumber yogurt sauce. See serving ideas on side of box. Makes 12 patties. See side panel for no fry and freeze & reheat directions. No Fry: 1. Heat oven to 375 degrees F. Lightly grease baking sheet with 1 teaspoon butter or olive oil, or lightly coat with non-stick cooking spray. 2. Prepare mix and form patties as directed on back of box in steps 1 and 2. 3. Place patties on baking sheet. Bake 15 to 20 minutes or until bottoms are golden brown; turn. Continue to bake 15 to 20 minutes or until evenly browned and crisp. Freeze & Reheat: Falafel patties can be made ahead and frozen. To reheat, place 2 patties on microwaveable plate, loosely covered with plastic wrap. Microwave at high 1 to 1-1/2 minutes. Serving Ideas: Serve in pita bread with cucumber yogurt sauce, sliced red onion, cucumber and tomato. Serve on hamburger bun with ketchup, mustard, pickles, etc. Serve as an appetizer with cucumber yogurt sauce or tahini sauce.
