The fancy shape of farfalle (say fahr-FAH-leh) pasta has crevices that hold tidbits of sauce. This pasta is extruded through a bronze die giving it a rough texture to better hold the sauce. Italian Classics farfalle, imported from the Puglia region, is designed to hold its shape! We start with the finest Italian wheat from the Puglia plains to create this protein-rich durum wheat, which is gently ground and sifted to create a very hearty semolina flour. The resulting pasta keeps its shape in cooking. It becomes what Italians call al dente (meaning to the tooth) pasta which offers a slight resistance when bitten into, but doesn't get soft, break or tear. Cooking times may vary depending on your equipment. Pasta approximately doubles in volume during cooking. 1. Bring 4 quarts water to a rapid boil (salt if desired). 2. Add desired amount of pasta to boiling water. Reduce heat to a gentle boil. 3. Cook 9 minutes (al dente) to 12 minutes or until desired tenderness, stirring occasionally. 4. Drain carefully. Serve with your favorite sauce. If using for a cold salad, cool immediately under cold running water. Estimate 1 cup dry pasta per serving. Store in a cool, dry place and use by date stamped on end flap.
