Tasty Ribbons: Fettuccine (say feht-tuh-cheh-nee) is a long flat pasta which is cut in narrow (about 3/8 inch) strips. The Italian word fettucia means ribbon and this ribbon-shaped pasta is ideal for sauces that can adhere to the pasta while being twirled on a fork. This pasta is extruded through a bronze dye giving it a rough texture to better hold the sauce. It's important that cooked fetuccine have separate, distinct strands - not be an overcooked, sticky mass. Italian Classics Fettuccine, imported from the Puglia region, is designed to cook up right! We start with the finest Italian wheat from the Puglia plains to create this protein-rich durum wheat, which is gently ground and sifted to create a very hearty semolina flour. The resulting pasta keeps its shape in cooking. It becomes what Italians call al dente (meaning to the tooth) pasta which offers a slight resistance when bitten into, but doesn't get soft, break or tear. Cooking times may vary depending on your equipment. Pasta approximately doubles in volume during cooking. 1. Bring 5 quarts water to a rapid boil (salt if desired). 2. Add desired amount of pasta to boiling water. Reduce heat to a gentle boil. 3. Cook 8 min (al dente) to 10 minutes or until desired tenderness, stirring occasionally. 4. Drain carefully. Serve with your favorite sauce. Store in a cool, dry place.
