Ancient grains have been a diet staple for thousands of years with good reason: They are rich in nutrients, less chewy than other whole grains and have less gluten than modern wheat flour. What's not to love? We would like to introduce you to our new (ancient) favorites: Kamut - Believed to be of Egyptian origin, this ancient grain is higher in protein than many other whole grains. And it's a good source of selenium, zinc, magnesium, and iron. Spelt - A prehistoric ancestor of modern wheat, spelt is an excellent source of manganese and a good source of fiber, vitamin B3, and protein. Organic Wheat Flour, Ancient Grains Flour (Organic Farro, Organic Spelt, Organic Kamut), Madhava Sweetener Blend (Organic Cane Sugar, Organic Coconut Sugar), Baking Powder (Monocalcium Phosphate, Sodium Bicarbonate, Corn Starch), Salt, Corn Starch, Gum Arabic, Carrageenan, Xanthan Gum.

What You Need: 1 cup mix, 1 cup water or milk, 1 tbsp oil. Baking: 1. Combine 1 cup pancake mix, water and oil in a medium mixing bowl. Whisk batter until blended. 2. Pour 1/3 cup of batter on a lightly greased, preheated griddle or pan. 3. Cook pancakes over medium heat approximately 1 to 1-1/2 minutes per side until golden brown. Makes two 4-inch pancakes. Try These Variations: Try berries in your pancakes! Add 3/4 to 1 cup fresh or frozen berries to prepared batter. Cook as directed above. Craving Waffles? Blend 2 whipped egg whites into the prepared batter. Cook according to waffle maker directions.
