Cocoa Rouge Substitutions: To substitute Cocoa Rouge for unsweetened baking chocolate: For each ounce of unsweetened chocolate called for in your recipe, use 3 tablespoons cocoa powder plus tablespoon butter. Cocoa Beverage Preparation: For individual serving, combine 2 tablespoons Cocoa Rouge and 2 tablespoons sugar in a microwave safe mug. Measure out one cup of milk. Stir 1-1/2 tablespoons milk into cocoa powder to form a smooth paste. Mix in remaining milk. Enjoy cold or heat in microwave for 1 minute or to desire temperature. To make four servings, use 1/2 cup Cocoa Rouge, 1/2 cup sugar and 4 cups milk. Combine Cocoa Rouge and sugar in saucepan. Whisk in 1/3 cup of the milk to form a smooth paste. Add remaining milk. Heat on medium-low with constant whisking until hot but not boiling. Pour into cups and serve immediately.
