You can see the freshly sliced cheese, the real tomato sauce, the finest quality uncured pepperoni, and the puffy golden crest. This is the real deal and it is gluten free. The Green Mountains of Vermont are home to a number of artisanal bakers, cheese makers, and specialty food entrepreneurs. We take great pride in supporting local agriculture and embrace Vermont's creative economy. Here at Against the Grain, we have developed a unique pizza made from the freshest ingredients. It is prepared by staff who care deeply about the quality of our ingredients and the people (and animals!) behind them. We work with family farms and local producers to craft an honest pizza, made of nothing but our ingenuity and simple ingredients. From the farm families to our family to yours, we're making gluten free delicious. Artisanal pizza. Deliciously gluten free. No one ever said it would be easy - going Against the Grain. And, no one understands more than we do, the challenges of delivering delicious gluten free products in a world of industrialized food. There was a time when food was hand-crafted at home from simple, farm-fresh ingredients and eaten with respect. Somewhere along the way, the people were taken out of food production, and then the real ingredients themselves. Food chemists invented flavor enhancers, dough conditioners, binders, preservatives, and modified basic food starches beyond recognition. Something as sacred as a cheese-topped pizza was transformed from comfort food into a chemistry experiment. Here at Against the Grain, we sincerely believe you are what you eat. Our milk comes from a local family farm that bottles the milk shortly before we received it. Our eggs are delivered directly to us from the hens by a local family farm - you can't find them any fresher. Our cheese has no anti-caking agents and is natamycin-free. We do not use ingredients that were produced using biotechnology, and we never use any binders, dough conditioners, flavor enhancers, stabilizers, or preservatives. In fact, you can pronounce and spell all of our ingredients! No preservatives, dough conditioners, gums, or flavor enhancers are ever used in any of our products. Who is Against the Grain? We're a family-owned commercial bakery located in one of the coolest towns in the United States - Brattleboro, Vermont. On the banks of the Connecticut River, we bake all-natural artisan breads, pizza shells, and pizzas in our dedicated gluten free facility. Our products contain no gluten, wheat, corn, soy, rice, peanuts, or tree nuts. We believe strongly in supporting our local economy as well as providing livable wages. Topping: Tomato Paste (Vine-Ripened Fresh Tomatoes and Citric Acid), Mozzarella Cheese (Pasteurized Milk, Cheese Culture, Salt, Rennet), Parmesan Cheese (Pasteurized Milk, Cheese Culture, Salt, Rennet), Water, Uncured Pepperoni (No Nitrates or Nitrites Added Except for That Naturally Occurring in Celery Powder) (Pork, Beef, Salt, Contains 2% or Less of Water, Spice, Seasoning (Cane Sugar, Natural Flavoring), Seasoning (Extractives of Paprika, Natural Spice Extractives), Lactic Acid Starter Culture).

Directions

Keep frozen. Cook thoroughly. Baking Directions: Remove pizza from plastic wrap and cardboard tray. Preheat oven. Bake pizza directly on rack or on a perforated pan. The cheese should be lightly browned and bubbly. If using a pizza stone, preheat the stone for 10 minutes in a 500 degrees F oven, and then follow the perforated pan instructions below (baking times may vary). Pizza may be grilled outdoors on lowest burner setting, but brush the bottom of the crust with oil and watch carefully! Crispy Crust: Oven Placement - Directly on rack; 400 degrees F; 18-20 minutes. Bendable Crust: Oven Placement - Perforated pan; 375 degrees F; 18-20 minutes.
