As an alternative, place pan of covered dough on rack over large pan of hot, steaming water. 2-1/4 tsp. Active Dry Yeast (1/4 oz) = 1 Env. Active Dry Yeast (1/4 oz) = 1 cake fresh yeast (0.6 oz).
